El Capitolio Strawberry Cocktail

This coffee is a summery one! Fruity strawberries, a lovely sweetness, and a pleasant note of black tea makes us want to brew it cold. It’s an exciting cup that is fun to experiment with, we recommend to try it over ice on a sunny day!

In this process, the coffee cherries are fermented together with a mixture of dried strawberries, fresh fruit puree and must, as well as wine yeast and sugar. This changes the flavor of the coffee and contributes to a completely different experience.

El Capitolio is a farm run by Ana María Trujillo Rojas, a fourth-generation coffee farmer, and a recognized Q Grader who works with quality assessment of coffee within the industry. After her education at SENA, the national school for coffee quality in the Huila region, her journey led her to Quindío where she has worked for about ten years to develop and improve her skills in fermentation and coffee innovation. In 2025, she took the step to start her own project, where she now focuses on producing exceptional coffees.
