This coffee is a fun one! It’s exploding with dark fruit, we get notes of blackberry jam and a lingering chocolate finish. It’s an intense flavor experience with complex layers, making us want to keep sipping.
This coffee has been processed using a combination of methods, both the natural process where the coffee cherries are dried whole on beds, and the Carbonic maceration process borrowed from the wine industry, in which the coffee cherries are fermented in an environment with low or no oxygen, but rich with carbon dioxide. These processes bring out new flavors compared to a classic cup, contributing to a deeper, sweeter, and more complex coffee.
Sara Gutierrez represents the fifth generation of her family’s coffee farming legacy, combining traditional heritage with modern scientific cultivation methods in Colombia’s central mountain range. Her farm El Silencio in Buenavista, Quindío benefits from a unique microclimate where warm valley winds meet cool mountain breezes, creating ideal conditions for slow coffee cherry ripening among natural shade trees including walnut and banana plants. Through meticulous hand-harvesting, cool fermentation in special containers, and careful African bed drying processes, Sara produces exceptional coffee that showcases both family tradition and Buenavista’s distinctive terroir.
