The coffee has distinctive notes of green grapes, a crisp acidity that balances well with an underlying honey-like sweetness and pleasant floral aroma. Easy to drink, and enjoyable on a daily basis!
The washed process involves removing the coffee cherry’s outer layers through fermentation. After depulping the coffee cherries, the beans ferment in water, separating fruit from the beans. This method enhances the clarity and brightness of the coffee, often bringing out the coffee’s acidity and highlighting its unique origin flavors.
This coffee is grown by a group of small producers in the municipality of Inza, Cauca of Colombia, who joined forces in 2015 to achieve larger volumes and obtain better prices for their coffee. The area is ideal for coffee cultivation, with its mineral-rich soil from the volcanoes. The original 10 farmers produce 20 tons per year and prefer to process their coffee directly on their farms to establish more direct connections with roasters. They plan to collaborate with surrounding farms to increase their volume and have been working with the local association ASORCAFE while maintaining their independent processing methods.
