Osmotic dehydration is an old method of drying fruits in liquids. Glucose sugar is mixed with a natural fruit extract, which binds with the water in the coffee beans, replacing it with enriched sugar. This specific application of the technique adds apricot flavors to the coffee using only natural ingredients.
The La Sirena farm in Colombia, located near the rocky area known locally as Peñas Blancas in Armenia, Quindío, is the heart of the operations called Sens Coffee. Sens Coffee was founded in early 2022 by Juan David Puerta, a food engineer who decided to enter the coffee industry. The farm is is run by the Puerta family, with Juan David continuously innovating the coffee processing. Sens Coffee also has a significant social impact by paying better prices for the coffee they buy from other local farms, as well as teaching them about the importance of good agricultural practices.
