Chiroso, sometimes known as Caturra Chiroso, is a rare varietal that was long thought to be a mutation of Caturra, but is now believed to also be related to Ethiopian Heirloom varietals, which would explain its bright, fruity and somewhat floral profile. This cup brings out some of those characteristics, with fruity notes of peach and melon, and a smooth mouthfeel that makes lovely to drink.
The washed process involves removing the coffee cherry’s outer layers through fermentation. After depulping the coffee cherries, the beans ferment in water, separating fruit from the beans. This method enhances the clarity and brightness of the coffee, often bringing out the coffee’s acidity and highlighting its unique origin flavors.
On the farm Las Brisas at 2100 meters elevation in Colombia’s Urrao Mountains, the owner Luis Eduardo Montoya has been focusing on high-quality varieties since he transitioned from social work to coffee farming in 2017. The farm maintains 60% of its land as protected forest within Colombia’s civil reserve network, cultivating rare varieties including Chiroso, Gesha, and Yellow and Pink Bourbon in the pristine conditions of the Antioquia region.
