The washed process involves removing the coffee cherry’s outer layers through fermentation. After depulping the coffee cherries, the beans ferment in water, separating fruit from the beans. This method enhances the clarity and brightness of the coffee, often bringing out the coffee’s acidity and highlighting its unique origin flavors.
Las Peñitas is rooted in a family legacy of agricultural passion. Jorge Benitez’s father moved to El Ocotillo region seeking better opportunities, eventually purchasing land where he cultivated cold-weather vegetables before transitioning to coffee. At just 14 years old, Jorge was entrusted with his own plot, where he planted Bourbon coffee trees that still thrive on the farm today. In 2005, Jorge’s father won first place in the 2nd edition of the Honduran Cup of Excellence, an achievement that inspired the family’s full commitment to specialty coffee. Jorge continued this legacy, and in 2017 earned 2nd place in the Cup of Excellence Honduras, a milestone that stands as the greatest recognition of his career so far, and a testament to the region’s exceptional coffee potential.
