This coffee is light and easy to drink. With an aroma reminiscent of candied almonds and the crisp acidity of apples, it’s perfect for a cold day.
The washed process involves removing the coffee cherry’s outer layers through fermentation. After depulping the coffee cherries, the beans ferment in water, separating fruit from the beans. This method enhances the clarity and brightness of the coffee, often bringing out the coffee’s acidity and highlighting its unique origin flavors.
The farm Manantiales del Frontino is located in Valle del Cauca in Colombia. With an altitude from 1500 to 1950 meters above sea level, its location and altitude gives the farm a micro-climate that stands out from the surrounding area. Fog blocks the sun until mid-day, and when the fog lifts in the afternoon a mountain blocks direct sunlight until dusk. This allows the coffee to grow slowly and develop properly in the shade. The farm works hand in hand with the local community, creating job opportunities and educating farmers for close to 10 years. The coffee plants share the land with other crops and trees, making sure that there is sufficient diversity in the ecosystem. One part of the farm is also a protected rainforest, and if you’re quite enough you may even spot some wild animals that can relax without the worry of being hunted.
