San Isidro 48 is a varietal that was developed on Costa Rica specifically for their climate, and this coffee is a smash hit for us who love a pleasant acidity with multiple layers of flavor. The cup brings a juicy sweetness of lemon and citrus fruit balanced with an interesting complexity that brings our mind to fruity peppercorns and a finish of cocoa.
The honey process, also known as pulped natural, involves removing the coffee cherry’s skin while leaving the sticky mucilage layer intact during drying. This method combines elements of both washed and natural processing, allowing the fruit sugars to interact with the bean as it dries on beds. The result is often a coffee with enhanced sweetness, fuller body, and fruity complexity that bridges the gap between the brightness of washed coffees and the richness of natural-processed coffees. Depending on how much mucilage is left on the bean during drying, the honey process is classified into different colors such as black, red, yellow or white honey, with black indicating a higher amount of mucilage retained. In general, the darker the color classification, the closer the result will be to a natural process, and the lighter the color the closer it is to washed process.
Finca Carrizal is a family-owned farm that has been producing coffee since 1890, nestled between the volcanoes Poás and Barva with natural forest covering 15% of its land and crystal rivers forming its borders. At 1500 meters elevation with ideal conditions, every cherry is hand-picked at peak ripeness, meticulously selected, and milled on-site to ensure high quality. Rodolfo who is a third generation coffee farmer in the family has now also fully introduced his daughter Ariela to the business, and they work hand in hand to ensure a continued family legacy of exceptional coffee.
